In our restaurant in Orvieto, traditional Umbrian cuisine is reinterpreted in a contemporary way through a careful study of the pairing of oil and food. Each dish begins with the selection of the most suitable oil—delicate, medium, or intensely fruity—chosen to enhance its structure, aromas, and balance.
